Black Bean Casserole

This is a really yummy dish that's really easy to make. It feeds 6 to 8
people. It also reheats nicly. You can make it spicy or not, depending on
your tastes.

2 cups of chopped onion

1 1/2 cups of chopped bell pepper (red or green, I like to use some of
both)

1 14 oz can of whole tomatos (you'll want to cut up the tomatos, but don't
drain them)

2 cans of black beans

2 cloves of garlic (diced or crushed, I like to use more than that as I
like garlic alot)

3/4 cup of salsa (I use a medium salsa, you can use hot if youlike)

2 teaspoons of Comino (cumin)

2 cups of grated monterey jack cheese (I like to use half regular and half
pepper jack)

1 package of corn tortillas

Put the onions, peppers, tomatoes (with the liquid from the can), salsa,
comino and garlic in a large frying pan or pot and bring to a boil. lower
heat, add the beans and simmer for about 10 min. remove from heat.

Preheat oven to 350

Take a baking dish and line the bottom with tortillas. spoon some of the
bean mixture over the tortillas, then sprinkle a layer of cheese. Then add
another layer of tortillas, then beans and cheese. keep adding layers
until you get to the top of the dish. Then add one more layer of tortillas
and then sperad the last of the cheese accross the top. 

Bake for 30 to 35 min until the top begins to brown a little. Allow to
cool for a little while. Serve with sour cream.
