Coconut Peaks
 
1/4 cup butter or margarine
2 cups sifter powdered sugar (I never sift)
3 cups flaked coconut
1/4 cup light cream (half and half)
 
1 6-ounce package semisweet chocolate chips (1 cup)
2 teaspoons shortening
 
 
In saucepan slowly heat butter 'till golden brown; gradually
stir in powdered sugar, flaked coconut, and light cream.  Drop
by teaspoonfuls onto waxed paper.  Regrigerate 'till easy to
handle, then shape into peaks.  Over hot, not boiling water, melt 
chocolate chips and shortening; stir 'till smoth.  Dip bottoms of
the peaks into the melted chocolate mixture, then harden on a rack
covered with waxed paper.  Makes about 3 dozen.

Melting the chocolate works best in a double boiler.  Or if you 
don't have a suitable double boiler use a metal bowl floating in
heated water.
