Both of these are incredibly simple, but I didn't want to take the
horrendous chance of leaving something out. I therefore consulted
with my dear mother and here we go.
Fried Morel Mushrooms
Salt
Pepper
1 cup flour
1 tsp cooking oil
As many morels as you can get
Ok, first off, slice the morels in half lengthwise. Then soak these
halves in saltwater. Approx. 1-2 tsp of salt per cup of water. Let
sit for about 5 min. Longer (until reconstituted) if using dried
morels. Put 1 tsp each of salt and pepper into a cup of flour. Once
the morels are done soaking, dredge them through the flour, then fry
until golden brown. Eat as a finger food, or on a sandwich as the
"meat". A little salt to taste may be needed, but probably not.
Fried Potato Cakes
Mashed potatoes
garlic
cooking oil
pepper
butter (optional)
Mix cold mashed potatoes with freshly crushed garlic. I use 1 clove
per 2 cups, but I'm a bit of a fanatic. Then, 1/8 tsp pepper per
cup, just enough for flavor. Form the potatoes into patties approx.
3.5" - 4" in diameter, and between .5" and 1" thick. Remember to
make sure the potatoes are cold or else you will have some problems
with that part. Lightly coat the sides of the potato cake with flour
before cooking. Flip while frying in skillet with a touch of oil
until golden brown on both sides. (Smell that garlic.) After
cooking, you may, if you wish butter the cake, some deviants like it
that way, but I can't recommend it.
True German cooking from the Wittig family, enough starch to do
Priest's collars for years.
I also think that I found a recipe for Guinness gravy laying around
here somewhere....
