Mmmmm Bruschetta...
- From my friends Nina and Jim.
Best with the following:
Fresh, ripe, plum tomatoes
Fresh basil
garlic
salt
pepper
extra virgin olive oil
real Italian bread (not French, not sour dough)
Start by cutting up the tomatoes into small cubes.
Throw them in a bowl and sprinkle them with salt.
This makes them bleed. Add desired pepper (I put
a little more than not).
Dice up the garlic very small. Do the same with the
basil. (Placing a few leaves on top of each other makes
it easiest to cut). Throw everything into a bowl and drizzle
it all with the olive oil.
Slightly ..I stress slightly toast the Italian bread. If it
toasts too much it makes it difficult to eat. Spoon off the
top of the tomato mixture and avoid any juice that is at the
bottom of the bowl. Once all the bread has the tomatoes on it, take
small
spoon fulls of the juice at the bottom of the mixture and drizzle
it over each piece of bread with the tomatoes on it.
Ready to serve. Enjoy!!
