To make up for the incredibly lame pun about what Al Gore called Disco
after he invented it (algorithm), here's a tasty recipe that fits the
Lent/Spring Break time of year:

MARGARITA SALMON WITH GRILLED CORN ON THE COB & ROASTED POTATOES 

1 side (3 lbs or so) fresh salmon, skin on (recipe feeds 8)
1/4 cup chopped garlic
1 bunch cilantro
2 tablespoons black pepper
1/4 cup sugar
2 tablespoons salt
1 tablespoon red chile pepper flakes
1 (16-ounce) margarita [see recipe below]
1+1/4 cups extra virgin olive oil
8 ears corn on the cob
16 Red Bliss potatoes
1/4 cup Italian dressing

Place salmon skin-side down in pan with high sides. Rub salmon with
garlic, cilantro, pepper, sugar, salt, and chile pepper flakes.

Pour margarita and oil over salmon, flip fish over and refrigerate for
one to two hours (but no longer). 

Light charcoal grill (adjust timing as needed for gas grill). Soak corn
with husk on, fully submerged. Preheat oven to 375 degrees (for
potatoes).

Cut potatoes into quarters and toss in Italian dressing. Spread out on
cookie sheet, cover with foil, and bake 20 to 25 minutes.

When coals (or gas grill) are ready, take corn out of the water and
place on grill still in the husk. Keep turning so that the husk browns
evenly on all sides. Remove from grill and place in a pan and cover, to
continue steaming.

Take salmon out and cut into 8 portions, leaving the skin on (the skin
helps hold it together while grilling).

Grill fish to desired doneness, about 3 minutes per side, depending on
the thickness of the salmon (keep away from  highest heat as this dries
it out too much).

Remove salmon from grill, shuck corn, and serve with the roasted
potatoes and more margaritas.

     Our journey starts...

     1.  Fill shaker with broken cubed ice.
     2.  Squeeze TWO fresh lime wedges into shaker.
     3.  Savor the fresh lime aroma (AAAAAHHHHHHH!!!!)
     4.  Add 2 oz. Cuervo 1800.
     5.  Sniff the cork.
     6.  Add 1/2 oz. of Jose Cuervo White if ya wish (white for bite!).
     7.  Add 1-1/4 oz. of Roses Lime Juice (accept no substitutes!).
     8.  Add 1/2 oz. of Bols Triple Sec (nothing but the best!).
     9.  Add "a splash" of Bols Orange Curaco (shh.. secret ingredient).
     10. Cover shaker tightly!
     11. Shake vigorously.
     12. Flip shaker in midair twice (three times if you're a pro).
     13. Uncover shaker and savor the flavor!
     14. Rim glass with Lime peel (outside only!).  
     15. Salt the outside only.
     16. Add fresh ice.
     17. Strain mixture over ice.
     18. Squeeze in 1 lime wedge and toss rind over left shoulder.
     19. Now kick back, turn up the tunes and enjoy!
