Hi there,

It's summer so it's cucumber time. I repeat my winning recipe for 
your enjoyment;

-Two large cucumbers
-equal (in weight) red onions
-a large cup of garlic cloves, peeled.
-two to three liters of vinegar, strong, white.
-Two MMe Jeanette peppers
-tablespoon black pepper, whole, NOT GROUND!!
-Two tablespoons juniper berries, dried.
-five or so bay leaves

Chop all edibles into fair sized chunks (to taste, really). I like 
to keep the garlic cloves intact. Slightly crush the pepper and 
berries, make cuts in the MMe Jeanettes but don't cut them up (unless 
you like seeds in your food). Put everything in a large pot with the 
vinegar. Cover and let simmer until everything is al-dente. Leave 
overnight, then remove the MMe Jeanette. (later if you like hot, 
or sooner if you don't).

Serve with indian/carribean food. Goes particularly well with rice 
and fish. Also great on sandwiches and as snack.

This stuff keeps for months if not years if you seal off the 
container airtight and sterilise everything before use.
