			Wasabi Salad Dressing
			_____________________

Ingredients:
 * Powdered Wasabi
 * Soy sauce (accept only the best: Kikkoman)
 * Rice vinegar (Real Men use unseasoned)
 * Sesame oil (dark, not the wimpy light stuff)
 * Chili oil (optional)
 * Olive oil (if you're not using chili oil)
 * Water
 * 1/2 tbsp Sesame seeds

The Plan:
Get yourself a small bowl or mixing vessel, and something
to cover it with.  Into that bowl, put 1 tsp of powdered 
Wasabi, and one tsp of water.  Mix 'em up real good, until
there aren't any more powdery spots.  Now cover the bowl
and let it sit for 5 minutes or so.

Add 1 tsp sesame oil to the wasabi and sort of whisk it 
with a fork until you have a suspension.  Or would that be
an emulsion?  Anyway, do it.  Then add a little more oil 
either chili (for the brave or foolhardy) or olive (for 
the sane), and mix some more.

Ok, now add... um... 2 tsp soy sauce (whatever you do, 
don't use Angostura or LaChoy or something like that!) and 
blend with the wasabi/oil.  

Still with me?  Ok, now add 1 tbsp rice vinegar and mix it
all up again.  You are free to sprinkle in some ground black
pepper, but that's gratuitous, if you've done it the rest 
right.  You'll want to experiment with the relative amounts
of all the ingredients, both by way of scaling the recipie
to the amount of salad you're making, and for moderating 
the intensity of the wasabi taste.

Now get out a small skillet, and put it on (surprise!) da
stove.  Get it good and hot (medium-hi works for me, but
stoves vary).  Put the sesame seeds in it (dry) and toast 
them until they are browned.

Toss your salad ingredients with the dressing, and then
sprinkle the still-warm sesame seeds on it.

Smile happily to yourself as you enjoy the dressing.

A good salad to have with this (in case you were wondering):
 * Fancy lettuce mix (you know, with all the pretty 
   little greens)
 * Scallions (sliced at a 45-degree angle into 3/4" lengths)
 * Grape tomatoes (sliced in half)
