                Big Tejas Salsa

1 Jicama
1 Jalopeno (have another one ready in case this is not enough)
2 tbsp chili powder
10 baby carrots
1 clove garlic
8 oz grape tomatoes
3 scallions
1/2 can sweet corn niblets
1/2 can black beans ("frijoles negros")
1 tbsp red wine vinegar
1 dash tabasco
1/2 tbsp Mrs. Dash seasoning mix
1 tsp Lemon Pepper
a couple sprigs of Cilantro (optional)
1/2 tbsp olive oil
salt

Finely chop the jalopeno, tomatoes (these are delicate-- I cut
them into 1/4ths or 1/8ths, depending on their size), carrots,
jicama, garlic, and scallions, and mix them together.  Drain
and wash the beans, and put them in, along with the corn.  Add
the tabasco and stir.  Add the Chilu powder while stirring.
Repeat the adding-and-stirring process for the Mrs. Dash, salt,
lemon pepper, olive oil, and vinegar.  Garnish with the cilantro 
on top.

Serve with good chips.  If you can find Simpatico beer, this 
goes well with it.
