This is not a hacking list. The subject of hackery comes up, but
as a news item. Hackery is the *one forbidden topic*.
However, cookery is quite allowed:
To make good chile: (More properly, "Carne Asada" IIRC)
Dust 1 lb chuck cut in cubes with flour and powdered
chile peppers.
Melt a bit of lard in a skillet. Prepare a mole of ground
dried chiles (serranos are nice), cumin, garlic, epizote,
oregano.
Add to lard, cherish the fragrance.
Brown chuck in lard.
Add a large diced onion, and as many cubed fresh ancho
chiles as suit your pallet. Wilt, cover, let simmer
two-three hours "en sus jugos". Add a bit of water or beef
stock if needed to keep a thick gravy.
Serve with "frijoles borrachos", pinto beans cooked in Carta
Blanca beer (someone else will supply the recipe), and
a large stack of fresh corn tortillas.
While it's cooking, have a huge serving of ceviche.
(Mexican sushi -- red snapper soaked in lime juice and
cilantro is REALLY GOOD).

How much is a "mole" of ground dried chiles? What's the
molecular weight of serranos? In cooking, quantities are
usually expressed in millilitres, grammes, tablespoons, etc.

:-) Mole: (spanish. "MO-leh") Ground spices fried in oil, much like
Hindu cooking.
