The DEEP HIDDEN SECRET OF AGEING WINE:  take one gallon of jug red
wine.  Add a few ~drops~ of natural extract of vanilla.  Let it mellow
for an hour or two. It's "illegal" to do this commercially.  This
works with cheap-ass American whiskey or brandy, too.  Add a drop
of tincture of iodine to make bourbon into Prohibition bathtub Scotch.
(Real Scotch gets the iodine from seaweed, and iodine is the characteristic
"Scotch" taste).
