Ingredients:

1 cup rice flour
1/2 cup grated coconut
1/2 cup brown sugar (lesser if u want to reduce sugar)
salt to taste
Water

Method:
Mix the salt in the flour. Pour water into flour and mix to get
a dough like that for breads. Keep aside.

Mix grated coconut and brown sugar. Get 2 few pieces of square
plastic sheet, around 10 inches square.  Divide the dough into 2, make balls.

Place ball on plastic sheet,wet hand, and flatten dough to less than 1 cm thick
by hand. (Try to make it into a flat circle :-) )

Put half of the coconut and sugar mixture onto one half of the flattened dough.

Fold the other half of the dough(together with the plastic sheet under it) so
that the coconut -sugar mixture in enclosed inside the dough like a big curry 
puff.

Steam for 10 mins. Remove plastic sheet and it's ready to serve.

Note : In India banana leaves are used instead of the plastic sheet.

By the way, for Nasi Lemak, (as I saw it in the dc-stuff Cookbook) an easier
way to make it would be to cook the rice in a rice cooker, substituting water 
with coconut milk and placing the pandan leaves with the rice in the rice cooker.

The Pandan leaves can be removed before eating.
Salt also can be added before cooking.
