...a grilling tip: one of the things that people often do is stick a 
knife or fork into meat to see if it's done/how well-done it is. grilling 
makes this even more common, since the uneven cooking temps/conditions mean 
that a set time or the appearance aren't always reliable 
indicators.  however, poking holes in meat means that all the flavorful 
juices escape into the fire, leaving you with a tougher, less tasty piece 
of meat.

how to tell if beef is done:

1. press a finger to the area of your chin just below the center of your 
   lower lip.  that's what meat feels like when well-done.
2. move your finger up toward the corner of your lip, about half way. 
   press. that's what medium done feels like.
3. press your finger just below the corner of your lip: rare.
