Oh, and nice Eggplant Parmesan recipe. Pity I so loathe eggplant. How
about Peking Duck? Now that's a recipe I'd really love. I have baked
pheasant, stewed squirrel, or braised mule deer steak for the game
aficionado.

Braised mule deer. Take a couple of decent sized steaks, and marinate in
Good Honest Beer for 20-40 minutes. Baste with the following:

1/4 cup worcestershire
couple tablespoons (to taste) lemon juice
1/4 cup celery, chopped fine (or blended, if you're near one)

crushed peppercorns to taste

Heinz steak sauce is not an acceptable substitute. Wine or cider vinegar
is ok instead of lemon. If no celery, add a little extra salt.

Braise until outside is appropriately browned. Well-done meat is an
abomination to the hunter, and an insult to the deer. Remember that mule
deer is a lightly flavored venison, and should not be overwhelmed with
onions or other strong condiments.
