Get a recipe for mango chutney off the net or from an Indian cookbook.
Substituting rhubarb for green mangos works well -- the tartness is
similar -- and, at least here in Canada, saves a lot of money. I've
also tried apples, apricots, zucchini, ... and none work as well as
rhubarb.



From: LegalEagll Date: Thu, 27 Jun 2002 11:10:48 -0400 Prepare batter for a yellow cake mix according to package directions; turn into greased and floured 9x13 pan. Dump 4 cups of chopped rhubarb on top of the cake batter, not mixing into, but a layer on top of. Sprinkle the sugar on top of the rhubarb. Pour 1 pint of whipping cream (unwhipped) over the sugar. Bake at 350 for 50-60 minutes, until cake springs back when lightly touched. The cream, sugar, and rhubarb actually end up sinking to bottom, forming a custard layer. Makes 1-12 servings, depending on how big your serving is. LegalEagll
