Blue Cheese Walnut Tart

1 Each pre-baked tart shell, 9" by 1 ½" sides
½ cup chopped chives
½ cup chopped toasted English walnuts
5 large eggs
1 ½ cups heavy cream
¾ pound blue cheese, preferably Amish


Scatter chives and walnuts over bottom of pre-baked tart shell. Place shell
on a baking sheet and set aside. Preheat oven to 400º. Place eggs in bowl of
electric mixer (can also use a food processor or whisk by hand), and beat
with paddle till completely homogeneous. Add cream and mix until smooth.
Crumble cheese into cream mixture and mix slowly till relatively smooth with
no large lumps of cheese. (This mixture may be made 1 day ahead and
refrigerated till needed. Do not pour into tart shell till ready to bake.)
Pour custard evenly into tart shell filling to the top. Distribute any lumps
of cheese, walnuts and chives evenly. Bake tart 25-30 minutes till browned
and puffed. Tart will collapse and firm as it cools. Serve at room
temperature as an appetizer or dessert course.
