Red Velvet Cake
Preheat oven to 350 degrees. Grease and flour cake pans.
ingredients
1 1/2 cups cooking oil
1 1/2 cups sugar
2 eggs
2 1/2 cups plain sifted flour
2 Tablespoons cocoa
1 teaspoon baking soda
1/2 teaspoon salt
1 cup buttermilk
1 tablespoon vinegar
1 teaspoon vanilla
1 1-ounce bottle of red food color
Cream shortening sugar and eggs. Make a paste with the coloring and cocoa
and add to mixture. Add salt and flour with buttermilk and vanilla.
Alternately add soda and vinegar and don't beat hard just blend. Bake 30
minutes at 350 degrees, bake in two 8 inch greased and floured pans.
Frosting
Cook together 1 cup milk and 1/4 cup flour until thick. Let cool to room
temperature. Beat 1 cup sugar and 1/2 cup shortening (crisco hard not
liquid) and 1 stick (1/2 cup) butter until fluffy on high speed. Add the
first mixture (flour and milk) and 1 teaspoon vanilla, continue beating
until icing is very fluffy.
