When I'm having folks over to grill, I always make my "crazy bread".

You'll need:
1) Large loaf of french bread
2) 15 (or more) cloves of minced garlic
3) 1/2 cup of olive oil
4) 2 tablespoons of cajun seasoning
5) 15 green onions chopped
6) 1 block of cheddar cheese
7) 1 block of mozarrella cheese
8) 2 teaspoons (or more) of cayenne pepper

Make a paste out of ingredients out of ingredients 2-4 and half
the green onions. Heat over low heat till the garlic gets soft or
appx 5-10 minutes. Cut the loaf of bread lengthwise and spread the
paste on the bread. Grate the blocks of cheese onto the open loaf.
Add the rest of the chopped green onions and the cayenne pepper.
Close the loaf, wrap in tin foil, and grill 15-20 minutes.

Another good (and easy) side to make on the grill is asparagus.
Just wash it and toss it directly onto the grill and cook 5 minutes
or so till soft and slightly blackened but not mushy.

Fish on the grill is terrific as well. Any salmon or swordfish or
"steaky" cut fish is terrific in an olive oil/garlic/lemon juice/lemon
pepper marinade then grilled till flaky. I've found for other fish
with a less steaky texture/cut/thickness, I've had to use one of those
fish baskets to keep it together and easy to cook.
