- Lost in the Fog Machine Zucchini Bread

"Fruit and vegetable breads were extremely popular during the disco era, 
another result of the just-then-emerging concept of eating healthy."

2 eggs
1/3 cup vegetable oil
1/2 cup granulated sugar
1 1/2 teaspoons maple flavoring
1 cup shredded zucchini
1 1/4 cups sifted all-purpose flour
1/4 cup wheat germ
1 teaspoon salt
1 teaspoon baking soda
1/4 teaspoon baking powder
3 tablespoons sesame seeds
1 mirrored disco ball
1 strobe light

Preheat oven to 350 degrees.  Using an electric mixer, beat eggs at a low 
speed in large bowl to blend.  Add oil, sugar, and maple flavoring and beat 
until mixture is think and foamy.  Stir in zucchini.  In another bowl, 
combine flour, wheat germ, salt, baking soda, and baking powder and stir to 
blend.  Add dry ingredients to wet ingredients, stirring evenly to 
integrate.  Pour batter into greased and lightly floured 9x5x3 inch loaf 
pan.  Sprinkle sesame seeds over top, distributing evenly.  Bake until 
toothpick inserted into center of loaf comes out clean, about 1 hour.  Cool 
in pan on rack for 10 minutes.  Turn loaf onto rack and cool 
completely.  Hang disco ball in center of room.  Turn on strobe 
light.  Slice and serve bread.  Boogie like there ain't no tomorrow.
