ganache:
1# bittersweet chocolate
1c. heavy cream
1c. milk
2oz butter
1T. hazelnut extract (almond will do in a pinch...)
1. chop chocolate
2. bring milk and heavy cram to a simmer in heavy 2qt. saucepan
3. as soon as a simmer is reached, remove mixture from heat, and add chocolate.
4. let chocolate and cream mixture sit for 5 minutes or so, and then
incorporate chocolate with spatula.
5. stir in butter and flavoring (to taste)
note: cream and milk mix can be steeped with items and then strained out,
e.g. coffee, vanilla beans, lemon zest, etc.
