I only have a couple of things that we make consistantly, and I guess I 
will jot some down.

Chicken Marsala

Start with about 2 lbs of chicken breast, can already be thin sliced or 
you can slice the breast in half. I pound them slightly, careful not to 
break them all up (cutlong wise like cutlets).

Fry in olive oil till cooked.

Option:
Dry the cutlets, then dip in egg/water mix, then bread crumbs.  When I
bread the cutlets, I usually put in some parmesan cheese and extra pepper
to the bread crumbs, then fry in olive oil till golden brown on both sides,

Next, lay cutlets out in a baking dish. 

In another pan, melt 2 sticks butter and pour in 3-4 TB of olive oil to 
temper the butter so it doesn't burn, put in 1 (or 2 if you like) 12 oz can 
(or fresh sliced, sauted) mushrooms and pour in 1 bottle marsala wine, I get 
Holland brand, any brand is fine (12 oz).  Cook down till the alcohol smell 
is about gone (20 minutes) then pour over the chicken cutlets and bake for 
30 minutes at 350 degrees. 

While chicken is baking, cook linguini (or the pasta of your choice).

When everything is done, drain pasta, set chicken on top and drown it with 
sauce.

Eat!
