Following is a recipe which I call "oven stew" for lack of a better idea
of what to call it.
This recipe is intended to clear bits of edible stuff out of the fridge
without having to throw it away.
Two medium-sized potatoes
Five boneless chicken breasts (or enough to cover the bottom of your cassarole dish)
Flour
White wine[1]
One segment garlic
Assorted frozen vegetables (cut corn, green beans, and broccoli are good)
One bay leaf
Three sage leaves
One cup shredded cheese (cheddar, jack, blue (in small amounts), whatever)
Preheat oven to 450F degrees. Line the bottom of a cassarole dish[2] with
chicken breasts. Pour in enough wine to half-submerge the chicken. Turn
chicken over to coat with wine and set the dish aside. In a seperate dish
or bowl, mix together potato cubes, vegetables, garlic, and cheese.
Spread this mixture over the chicken. Lay a bay leaf and sage on top.
Cover and put in the oven for 30-45 minutes. Poke around with a fork to
verify that the chicken is cooked all the way through.
[1] If you can't drink it, don't cook with it!
[2] I used a Calphalon saucier pan. It seems much more approriate for
this sort of thing.
