Subject: Lime Chicken Recipe
... a recipe, for those of you with chicken, and a desire not to fry
it all until you die of a heart attack.
Ingredients:
6 Chicken breasts
1 Clove garlic
1 Slice ginger (thin)
2 limes
Light olive oil
6 stalks cilantro
1 jalapeno pepper
Place the zest of half a lime, the juice of both limes,
the garlic, chopped into 3 large pieces, the ginger (whole
slice), the rough chopped cilantro, the pepper, quartered
lengthwise, and enough oil to help coat the chicken breasts
into a ziplock bag with the chicken.</run on sentence>
Marinate for at least 3 hours, grill. It even turns out
well using a George Foreman type grill. Throw a little
salt into the marinade depending on how much you like.
Pepper shouldn't be needed, but if you must, go ahead.
Thanks go out to Kralizec for his Carnitas recipe, it
turned out really well when me and a couple friends tried
it. The place we usually get them serves theirs dry, so
we reserved half the meat, and let it cook the last 5-10
minutes dry. Both the wet and the dry were very good.
