Mountain Dew Couscous & Jerk Chicken

Tasty stuff and pretty easy to fix...

Here's the ingredients:

Chicken:
1 cup olive oil
Juice of 1 lemon
2 tablespoons bottled jerk seasoning (the hotter the better)
6 boneless, skinless (6- to 8-ounce) chicken breasts 

Couscous:
1 pound instant couscous (or 1.5 of the 10 oz. box five minute kind)
2 cups Mountain Dew
2 ripe mangoes, diced
1 small red onion, finely diced
1/2 bunch cilantro, finely chopped
1/4 cup olive oil
1/4 cup fresh squeezed lemon juice 

Directions:

Chicken: In a large-sized, lidded container, combine olive oil, lemon
juice and jerk seasoning. Add chicken breasts, and toss to coat
thoroughly. Marinate, refrigerated, 1 hour to overnight. (The longer you
marinate, the more intense the flavor.) While chicken is marinating,
prepare couscous.

Couscous: In a mixing bowl, combine couscous, Mountain Dew, mangoes,
onion, cilantro, olive oil and lemon juice. Refrigerate for at least 1
hour before serving.

Drain excess marinade from chicken breasts and grill or broil them,
turning once after about 7 to 10 minutes, until done.

Serve chicken breasts on top of couscous. Quench flames with Guinness.
