okay, so here's a lineage. used to be in the hotel/ski resort business
and worked with the ex-wives of ronnie james dio and mickey lee soule.
dave feinstein went on to own a little 1940ish style italian family
restaurant called The Hollywood.
Anyhoo, from the piano player's ex: Tortellini Ramona (to accompany Chicken
Marbella, below)
1 1/2 C dry white vermouth
2 1/2 C heavy cream
pinch of freshly grated nutmeg
2 T salt
freshly ground black pepper
1/2 lb fresh tortellini
3/4 lb. gorgonzola cheese
6 T grated Parmesan cheese
1. Bring vermouth to boil in saucepan; reduce to half
2. Add cream, bring to boil over low heat. Simmer. Season to taste.
3. Simmer uncovered for 15 minutes over *very* low heat; reduce by 1/3
4. Bring water to a boil for cooking tortellini. Add salt and tortellini
and cook until tender. Drain.
5. Return pasta to pot.
6. Remove cream sauce from heat, stir half the gorgonzola cheese and all
the paremesan into the cream sauce. Pour over tortellini.
7. Cook over medium-low heat, gently stirring for 5 minutes or until cream
has thickened.
8. Divide tortellini mixture into even portions (6) and plate up. Sprinkle with
remaining gorgonzola, crumbled. Serve right away.
Chicken Marbella
5 lbs quartered chicken
1 head of garlic, peeled and finely pureed
1/8 c. dried oregan
salt and freshly ground pepper to taste
1/4 C. red wine vinegar
1/4 C olive oil
1/2 C. pitted prunes
1/4 C. green olives
1/4 C. capers
3 bay leaves
1/2 C brown sugar
1/2 C white wine
1/8 C italian parsley or cilantro, finely chopped
1. in bowl combine chicken, garlic, oregano, pepper, salt, vinegar, olive oil,
prunes, olives, capers, juice, bay leaves. Chill and marinate overnight.
2. Preheat oven to 350
3. Arrange chicken in a layer in one or two large shallow baking pans. Spoon
marinade over evenly. Sprinkle with brown sugar and pour white wine around
the pieces.
4. Bake for 50-60 minutes. Baste frequently with pan juices. Chicken is done
when thighs yeiled clear yellow juice rather than pink, when pricked at their
thickest.
5. Transfer chicken, prunes, olives, capers to platter. Moisten with pan juices,
sprinkle with parsley or cilantro. Serve pan juices as accompaniement.
6. May also serve room temperature in juices for a celebratory picnic entree.
