Dredge thawed, and patted dry wings and drummettes in flour. I prefer only
drummettes.
Deep fry in hot vegetable or peanut oil a few at a time until the red blood
disappears inside the chicken, near the bone. I prefer well done.
In a separate bowl, mix a combination of melted butter with Louisiana hot
sauce, 3:1 ratio. About 1 teaspoon combined per wing. Vary the ratio for
desired reactivity. Add the just fried wings to the prepared sauce and
shake vigorously in a covered bowl.
Serve with blue cheese dressing (for dip) and cut celery. Naturally Fresh
blue cheese salad dressing and dip (available in most supermarkets) is
widely considered the best store bought dip among wing connoisseurs.
