Beef In Guinness

1 1/2 lb. chuck steak
1/2 lb fresh carrots, sliced into 3 in x 1/2 in strips
3/4 lb. potatoes, chunked
3 T oil
2 onions, chunked
3 T all purpose flour
salt and freshly-ground pepper
1/2 t. chopped fresh basil
2/3 C. Guinness
1 t. honey
1/2 C. Beef stock

1.  Cut the steak into twelve 1 inch thick pieces

2.  Trim carrots into pieces about the size of your little finger,

3.  Heat the oil and fry the onions for about 5 minutes (or until soft).  
    Transfer onions, drained, to a shallow, greased, casserole dish.

4.  Season the flour with spices, dip the meat in the flour, then place in 
    oil and fry until browned.

5.  Transfer meat to casserole dish with the carrots and potatoes (not cooked).

6.  Stir the flour into the pan and cook for 1 minute.  Stir in Guinness 
    and basil, bring to a boil and simmer for a minute.

7. Stir in the honey and the beef stock, return to a boil.  Pour over the 
   meat in casserole dish.

8.  Cover and bake in a preheated 325 degree oven for 1 1/2 hrs.
